Water with coffee flavouring would have been easier. We grind real organic espresso beans and steep the cold brew cold – for hours. You can taste the difference.

How Espresso Tonic is made

In bars, a hot espresso is pulled, cooled over ice and topped up with tonic – a play of fine coffee notes and sparkling freshness that's one of the most exciting trends in the coffee scene right now. That's exactly the drink we've put ready to drink in a can: just open it, ideally well chilled from the fridge.

For the base, we steep our cold brew ourselves. We grind Mount Hagen's organic espresso beans and cold-extract the espresso from them – so the caffeine comes straight from the espresso bean, just like a real espresso. Add to that a tonic component, made only with herbal extracts and natural flavourings. For everyone looking for something new – beyond the energy drink and the iced coffee.

Biofach, the world's leading trade fair for organic food. Sankt Sprizz and Mount Hagen share a bar. At one end, Johannes Schubert pours his aperitivo – topped up with his tonic. At the other end, Farid Keller of Mount Hagen – once a hospitality man himself – pulls fresh espressos, cools them down over ice and tops them up with tonic. The tonic he uses is Johannes's. He's tried it. It's good.

The queue

A queue forms at the bar. It doesn't get shorter. And almost everyone orders the same thing: Espresso Tonic. Johannes pours, watches – and that evening he understands two things. First: here's an alcohol-free drink that wakes you up and tastes like a celebration – and works just as well on an ordinary Tuesday. Second: with the decaffeinated beans Farid also has with him that evening, the same drink even works late at night.

The can

Johannes said yes.

Since then he's developed the drink this page is about: real cold brew from Mount Hagen's organic espresso beans – the decaf bean even fair-trade sourced – plus his dry tonic component made from herbal extracts. Only one question stayed open longer: bottle or can? The bottle was the first attempt. The can won – for three sober reasons. It's light on the way from warehouse to shelf. As a deposit can it goes back into the loop and is recycled at a high rate. And younger customers reach for the can in the chiller.

Nuremberg, Biofach fair 2025 – “the encounter”. We knew each other in passing from a fair before, but that evening chance brought us together for a booth party. Back to back, we rocked the bar. At one end: Johannes Schubert, the Bavarian start-up with the Aperitivo Kollektiv and his organic sprizz creations – today under the Sankt Sprizz brand. At the other end: Farid Keller of Mount Hagen coffee from the coffee city of Hamburg.

Farid grabbed Johannes' tonic water over ice, pulled a fresh organic espresso and poured it in. It didn't just look fantastic, it tasted amazing. What happened next was wild: the queue at the bar just wouldn't let up. People loved this combination of dry freshness and real, honest coffee flavour. Neat, with fresh orange juice or with gin – that evening, anything was possible.

Johannes watched the buzz and understood at once that Espresso Tonic is the ultimate alcohol-free soft drink and hits the zeitgeist exactly. The rest is quickly told: we put our heads together and had a vision. With a brand like Mount Hagen coffee and the empathetic founder Johannes Schubert – his expertise and his tonic – we wanted to create a great drink together and bring it to market.

In the weeks that followed, we put our heads together even more intensely. Johannes diligently fine-tuned the recipe, while we checked whether a collaboration between Munich and Hamburg was even possible at all. And we asked ourselves whether this innovative drink really stood a chance on the market. To gather the first honest opinions, there was of course no better place than… more trade fairs.

From trade-fair buzz to ready-to-drink

Let's be honest: who at home actually stands there, makes a cold brew specially and fiddles about mixing it with tonic? Exactly – almost nobody. The idea was born: Johannes turned it into a finished ready-to-drink beverage in the best organic quality. But before he went all in, we had our Espresso Tonic tested at events by the harshest critics of all: you. The overwhelming feedback showed us: the market is really up for it!

Bottle or can? We're testing both!

As a young start-up, Johannes faced real financial and logistical challenges when it came to packaging. The classic returnable-deposit loop for bottles is barely feasible for a brand-new product right now. So we're taking a pragmatic route and simply offer both for the time being:

The bottle comes to market – as with Johannes' Sankt Sprizz – deposit-free at first, running through the classic glass-recycling loop. That especially pleases the organic specialist trade, which often turns cans away. In parallel, we're backing the slim can in the logistically light and uncomplicated one-way deposit system. It chills in a flash, travels superbly and goes straight back into the recycling loop via the reverse-vending machine. Where the journey ends up? That's up to you.

And then it finally began! In February 2026 – to the day, one year after we stood back to back at the trade-fair bar – we officially presented our Espresso Tonic as a finished product for the first time. The result of long nights and intense work, ready for your fridges.

The result: Munich × Hamburg

Our shared idea “Espresso Tonic” is produced and marketed by Johannes Schubert's Aperitivo Kollektiv and the Sankt Sprizz brand in Bad Aibling (near Munich), in the Bavarian Alpine foothills.

Mount Hagen, the renowned organic coffee brand from Hamburg, stands at Johannes's side.

Real cold brew meets a fine tonic component made from select herbal extracts. All of it, naturally, 100 % alcohol-free and EU-organic certified. It carries the same signature as “Sankt Sprizz” and is made with the same care – a drink entirely of its own, and an honest one.

Whether in the 250-ml slim can or the 200-ml glass bottle: it's exactly the same, perfect recipe. You simply choose between two variants:

With caffeine: for an alert kick during the day.
Without caffeine: for completely relaxed enjoyment.

And how do you like to drink it? Neat and well chilled over ice, with a shot of freshly pressed orange juice, as a vegan iced coffee with a delicious sorbet, or mixed with a floral organic gin… anything goes!

The makers of the Bavarian aperitivo Sankt Sprizz fetch the coffee for Espresso Tonic 800 km away in Hamburg. Roundabout? Yes. More honest? Also yes. Espresso Tonic is made at Aperitivo Kollektiv GmbH (Sankt Sprizz brand) in Bad Aibling – around Munich, home of the aperitivo moment. The coffee is made by Mount Hagen, the organic coffee pioneer from the old coffee metropolis of Hamburg.
